Easy Paleo Bacon Meatloaf Recipe

Ingredients

  • Meatloaf Ingredients:
  • 2 pounds of ground beef
  • 1 pound of ground pork
  • 2 eggs
  • 10 slices of bacon
  • 1 cup of almond flour
  • Salt and pepper to taste
  • Tomato Sauce Ingredients:
  • 1 roasted red pepper
  • 1 15-ounce can of fire-roasted tomatoes
  • 4 cloves of garlic
  • One half of an onion, chopped
  • Salt and pepper to taste

Instructions

    1. Preheat oven to 350 degrees and place the rack in the middle of the oven.
    2. Using a food processor, blend all of the tomato sauce ingredients together.
    3. In a large bowl use your hands to mix together the beef, the pork, 1 cup of tomato sauce, eggs, almond flour, and salt and pepper to taste.
    4. Separate the mixture into two portions and place them into two nine-inch cake pans.
    5. Fill the cake pans all the way to the top.
    6. Top the loaves with the slices of bacon.
    7. Bake in your preheated oven for 45 minutes.
    8. Then turn on the broiler and crisp the bacon slices for approximately 10 minutes.
    9. While the meatloaf is cooking, simmer the remaining tomato sauce in a saucepan over medium heat.
    10. Once your meatloaf is completely cooled, slice it in the direction that is opposite of the bacon slices, against the grain.
    11. Top your meatloaf with the leftover sauce that has been simmering.
