I hope you all had a wonderful Thanksgiving! I know I’m late to hop on the “Thanksgiving anecdote sharing train,” but here I am anyway. Choo-choo! Truth is, I am still recovering from the glory of it all.
This year we couldn’t decide whether we wanted to pick up meals and donuts from The Cinnamon Snail or if we wanted to cook at home.
We love cooking at home on Thanksgiving. We love the Cinnamon Snail. There really was just one solution…
I don’t know if you guys know this fun fact, but when you’re in your 30s, you can’t eat 1 1/2 pies, three donuts and a myriad of savory treats over three days and expect your body to treat you like it never happened the way it did when you were 23. I learned this the hard way.
It took until yesterday for me to be able to make it through yoga without craving a nap halfway through.
I also had crazy sugar-filled dreams where I kept trying to drink green vegetable juices but they all turned into cupcakes when I put my hands around them. How nuts is that?
Cue segue into cupcake talk: I have cupcakes to share with you! My Chocolate Peanut Butter Coconut cupcakes are featured over at Made Just Right by Earth Balance this week and I hope you’ll go over and grab the recipe.
They’re appropriately snow-like for this time of the year and I think that the choco + pb combo is a nice surprise for all those who are expecting some sort of holiday-peppermint-candy-cane-cinnamon sensation to hit their mouths in December. Surprise everyone’s mouth. Fill them with these cupcakes.
My birthday is next week and I wouldn’t hate it if someone made these for me. I’ll surely be over my pie haze by then. Bring on the cupcakes! I’ll eat them like I’m 23!
