  1. Hello, I found your website through a link to your brown sugar bars (which I’m going to be trying soon!) and I have to let you know that reading your about section actually brought tears to my eyes. It made me feel SO much better about my most of the time veganism because I try, I try really hard.
    Keep being wonderful :)

  2. Hi Nikki. Kim is right. Your writing and photos are fabulous, informative and interesting. I look forward to trying some of your recipes and sharing your blog with friends & family. Great meeting you last night. See you on 2, 3 or 4 soon.

  3. Hi Nikki,

Your wonderful site was forwarded to me by Sara…A.J.’s sister. My name is Yassine and I am your hubby’s first cousin! So great to have found you…hey…we’re family! I love your philosophy…especially the part about just doing the best that you can….and not preaching veganism to anyone. That’s what I’ve been trying to do the last three plus years….and I’m still learning as well. I know one thing…since I’ve been vegan I have benefited greatly in my running (racing/recovery) and I feel better all-around. I hope to meet you in person one of these days. Hello to A.J.!!! Hope you both are well….and the kitties too :-)

    • Hi Yassine! Thanks so much for stopping by! I’m going to check out your blog and try to find some inspiration to get my butt outside and run now that the seasons are changing and the weather is tolerable. So nice to “meet” you!

  4. Hi,
I have got to thank you for your Banana Cake recipe. I took pictures of this thing becasue it was that spectacular. I actually made it twice because my family loved it so much and my friends didn’t want to miss out. I’ve been vegan one month now and I want to thank you for making this a wonderful experience. I love my desserts and now I am sure I am not missing out on anything. I hosted a vegan get together where everyone made a dish and explained how they made it, etc. My cake was the center of attention and all eyes were on it waiting for a slice. Forgot to tell you that when I made it the second time, I realized the coconut had white sugar in it so I broke open a real coconut and toasted and shredded it ( not in that order) myself. I have pictures for you if you are interestd. They came out great.

    • You are so sweet! I’m so happy to hear that you’re having success with your new vegan diet and that you’re receiving so much support from those around you. I think that really makes a huge difference. And you’re my hero for busting up a coconut on your own! I’d love to see photos of the cake! Send them here: nikki@thetolerantvegan.com

  5. Happy Birthday to the bestest, most tolerant: vegan, friend, co-worker, rob thomas lover, office watcher, grey’s anatomy viewer, kitty cat rescuer, smatty pants I know.

IIIIIIIIIIIII LLLLLLLLLLLLOOOOOOOOOOOOVVVVVVVVVEEEEEEEE YOU! and chewing gum (which I am doing right now in your honor, ha!)

  6. I’m writing a post sharing vegan recipes I’ve found that I think would be great for a superbowl party. Would you mind if I link to your artichoke olive pizza? I will just post the name of the dish, the name of your blog, and your dish photo all linking back to your site for the recipe. I’m a new follower and think your blog is amazing and I can’t wait to make a bunch of these recipes!!

  7. YAY!!!!! Finally a website with manageable vegan recipes!! This is my go-to spot for new recipes! THANK YOU!!!!!!!!!!!!!!!!!!!!

  8. Just have to tell you that I really enjoy everything about your blog from the easy recipes to the hilarious commentary. Just what I need at the end of the day…to laugh out loud AND find new recipes to try….so keep on bloggin’ 😉

  9. Just found your blog today. All I can say is, “Thank you”! Your ‘About me’ section is just what I needed to read. I am trying to become vegan and feel like I am in way over my head, but feel that your words were the encouragement I needed. Just do my best and not fret when I dont stick to it 100%

  10. Hi, I found you by seeing pics of some of your baked goods while looking for ideas for an upcoming bake sale for the animal rescue group I volunteer with. But I found your “about me” section inspiring because I love the idea of being the best vegan I can be and not beating myself up when I’m not ‘perfect’. Thanks for that.

I can’t wait to go home and look at more of your recipes because if they are a fraction as good as the pictures this will be my new go to place for recipes and more inspiration.
    thanks again, Dawn

    • Hi Dawn! Thank you so much for stopping by and leaving your comment. I’m so glad that you found your way here. I hope you find enough sweets for your bake sale and that you raise a ton for the animals :)

  11. Delicious!! Thank you so much for posting this fantastic recipe. I didn’t have pine nuts so I used chopped walnuts and I made these smaller/thinner and got 8 put of the recipe. The tahini dressing is yummy too. I’ll definitely be making this again.
