And in the meantime, those of you experiencing a hot and muggy summer with me will find a little bit of relief in this Creamy Strawberry Coconut Breeze.
For those of you frolicking in winter weather right now, this dreamy drink is ready to be bookmarked for later, or enjoyed today if you’re like me and love cold treats year-round.
I’m going to drink mine while I caress my air conditioner and beg her to never, ever quit on me.
- 1 cup whole strawberries, stems removed
- 1/2 cup apple juice
- 1 can unsweetened full fat coconut milk (I used Thai Kitchen), chilled in a refrigerator overnight
Slices the strawberries and place in a blender or food processor, along with the apple juice.
Cover and blend until smooth.
Open the can of coconut milk and scoop out the firm, solidified layer into a mixing bowl. Stop scooping once you hit the watery portion near the bottom.
Whip the coconut milk solids, either by hand or hand mixer, until the milk turns into whipped cream, 3-5 minutes.
Add the whipped cream and the extra leftover water in the bottom of the can to the blender.
Blend until all ingredients are combined.
