coconut oatmeal cookies

Happy Monday, kiddos! Who wants cookies?

I made these Coconut Oatmeal Cookies with Coconut Glaze for One Green Planet and I wish I had saved a few to get me through this hot and sticky summer day. If you make them, your kitchen will smell like a beach vacation.

Zanzibar, during our honeymoon adventure in 2009. The scent of these cookies reminds me of that view.

Much better than my view today.

Blah. Pass the cookies, please.

  1. I want to go to there! :) And I also want some of those cookies. They look awesome, and so healthy! I love coconut. Would you use the Earth Balance shortening, or the spread? The spread is a bit salty, but maybe that adds to the flavor?

    • I used the spread mainly because it’s what I had on hand. I think the shortening would be just as delicious!

  2. paint chips and staplers? Awesome view. I stare at a computer in a corner. Not much better.

These cookies look unreal. I feel like I should be eating them on that beach. or just at home. I love coconut so much, I want to roll myself in it. But then again, that would be gross.

  3. these cookies remind me of coconut macarons and i love those. so, i am pretty sure i would eat a bunch of these cookies in a heartbeat…hehe
