Happy Monday, kiddos! Who wants cookies?
I made these Coconut Oatmeal Cookies with Coconut Glaze for One Green Planet and I wish I had saved a few to get me through this hot and sticky summer day. If you make them, your kitchen will smell like a beach vacation.
Zanzibar, during our honeymoon adventure in 2009. The scent of these cookies reminds me of that view.

And I also want some of those cookies. They look awesome, and so healthy! I love coconut. Would you use the Earth Balance shortening, or the spread? The spread is a bit salty, but maybe that adds to the flavor?
I used the spread mainly because it’s what I had on hand. I think the shortening would be just as delicious!

These cookies look unreal. I feel like I should be eating them on that beach. or just at home. I love coconut so much, I want to roll myself in it. But then again, that would be gross.

At least you can see your desktop! Mine is covered with papers and toys and more crap! I definitely prefer the Zanzibar view – gorgeous! And the cookies look great, too!

these cookies remind me of coconut macarons and i love those. so, i am pretty sure i would eat a bunch of these cookies in a heartbeat…hehe
